I looooooooove Sarah Britton of My New Roots, and have taken a few food workshops with her here in Amsterdam. So when she came out with her Fully-Loaded Samosas made with rice-paper wraps and baked in the oven, I knew I had to try them out asap.
I have ZERO rice-paper wrapping skills as they're so fiddly, but it was fun to eat what turned out looking like aliens. :)
Made some turmeric-quinoa with raisins to go along with it, so I turned it from a snack into a main course.
For her mint chutney - I also added avocado to it, so it turned out more like a minty guacamole. YUMMY!
